1 large head of cauliflower, cut into florets
3 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika (optional, for color)
1/2 teaspoon Italian seasoning
1/4 cup grated Parmesan cheese (plus more for garnish)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Prepare the Cauliflower:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss cauliflower florets with olive oil, garlic, salt, pepper, paprika, and Italian seasoning.
- Spread evenly on the prepared baking sheet in a single layer.
Roast the Cauliflower:
- Roast for 20–25 minutes, tossing halfway, until golden brown and crispy.
- Sprinkle Parmesan cheese over the cauliflower and return to the oven for 2–3 more minutes, until melted.
Serve & Enjoy!
- Remove from oven and garnish with fresh parsley and extra Parmesan cheese.

Notes
- For extra crispiness, broil for 1–2 minutes at the end.
- Swap Parmesan for pecorino for a sharper flavor.
