Description

This crispy, cheesy roasted cauliflower is packed with garlic, Parmesan, and herbs for an easy, flavorful side dish. Perfect for weeknight dinners or holiday meals!


Ingredients

1 large head of cauliflower, cut into florets

3 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional, for color)

1/2 teaspoon Italian seasoning

1/4 cup grated Parmesan cheese (plus more for garnish)

1 tablespoon fresh parsley, chopped (for garnish)


Instructions

Prepare the Cauliflower:
  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower florets with olive oil, garlic, salt, pepper, paprika, and Italian seasoning.
  3. Spread evenly on the prepared baking sheet in a single layer.
Roast the Cauliflower:
  1. Roast for 20–25 minutes, tossing halfway, until golden brown and crispy.
  2. Sprinkle Parmesan cheese over the cauliflower and return to the oven for 2–3 more minutes, until melted.
Serve & Enjoy!

 

  1. Remove from oven and garnish with fresh parsley and extra Parmesan cheese.
  2. Serve hot and enjoy!

Notes

  • For extra crispiness, broil for 1–2 minutes at the end.
  • Swap Parmesan for pecorino for a sharper flavor.

 

  • Add a squeeze of lemon juice before serving for brightness.
