Description

This one-pan garlic parmesan chicken and potatoes is an easy, fuss-free meal featuring juicy chicken, crispy potatoes, and a flavorful garlic parmesan coating. Perfect for busy weeknights!


Ingredients

For the Chicken & Potatoes:
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 1/2 lbs baby potatoes (halved)
  • 3 tbsp olive oil
  • 1 tbsp butter (melted)
  • 4 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated Parmesan cheese
For Garnish (Optional):
  • 2 tbsp fresh parsley (chopped)
  • Extra Parmesan for topping

Instructions

Step 1: Prep & Preheat
  1. Preheat oven to 400°F (200°C).
  2. Grease a large sheet pan or baking dish.
Step 2: Season the Potatoes
  1. In a bowl, toss potatoes with 2 tbsp olive oil, 2 cloves garlic, ½ tsp Italian seasoning, ¼ tsp paprika, salt, and pepper.
  2. Spread evenly on one side of the baking sheet.
Step 3: Season the Chicken
  1. In the same bowl, coat chicken with 1 tbsp olive oil, melted butter, remaining garlic, ½ tsp Italian seasoning, ¼ tsp paprika, salt, and pepper.
  2. Place the chicken on the other side of the baking sheet.
Step 4: Bake & Add Parmesan
  1. Bake for 25 minutes.
  2. Remove from oven, sprinkle Parmesan cheese over chicken and potatoes.
  3. Bake for another 5-10 minutes until chicken is golden and internal temp reaches 165°F (75°C).
Step 5: Serve & Enjoy!
  • Garnish with fresh parsley and extra Parmesan. Serve warm!

Notes

  • Extra crispy? Broil for the last 2-3 minutes.
  • Want veggies? Add broccoli, asparagus, or green beans in the last 15 minutes.
  • Swap the protein! Use shrimp, salmon, or pork chops instead.
  • Low-carb? Use cauliflower instead of potatoes.
