For the Steak Bites:
- 1 1/2 lbs (680g) sirloin steak, cut into 1-inch cubes
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- 1 tbsp olive oil
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1/2 tsp red pepper flakes (optional, for spice)
For the Potatoes:
- 1 1/2 lbs (680g) baby potatoes, halved (or quartered if large)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tbsp unsalted butter
Instructions
For the Potatoes:
- Par-cook the potatoes: Bring a pot of salted water to a boil. Add the potatoes and cook for 5-7 minutes, until slightly tender but not fully cooked. Drain and pat dry.
- Sauté: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add the potatoes, season with salt, pepper, garlic powder, and paprika, and cook for 10-12 minutes, stirring occasionally, until golden brown and crispy.
- Add butter: Stir in 1 tbsp butter, toss to coat, and cook for another 1-2 minutes. Transfer to a plate and set aside.
For the Steak Bites:
- Season the steak: In a bowl, toss the steak bites with salt, black pepper, and smoked paprika.
- Sear the steak: In the same skillet, heat 1 tbsp olive oil over high heat. Add steak bites in a single layer (work in batches if needed). Sear for 2-3 minutes per side until browned and cooked to your preferred doneness. Remove and set aside.
- Make garlic butter sauce: Reduce heat to medium-low. Add 3 tbsp butter and minced garlic, stirring until fragrant (about 30 seconds).
- Combine & serve: Return steak and potatoes to the skillet, tossing to coat everything in the garlic butter sauce. Sprinkle with fresh parsley and red pepper flakes (if using).
- Serve immediately with a side of your choice!
Notes
- Best Steak Cuts: Sirloin works great, but you can also use ribeye, strip steak, or tenderloin for an even more tender result.
- Make it Spicier: Add extra red pepper flakes or a splash of hot sauce to the garlic butter.
- Meal Prep Tip: Par-cook the potatoes in advance to cut down on cooking time.
- Serving Ideas: Pair with a side salad, roasted veggies, or warm garlic bread.
