- For the Cheesy Smashed Potatoes:
- 1 1/2 lbs baby potatoes (Yukon Gold or red potatoes)
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped green onions or fresh parsley (for garnish)
Instructions
- For the Cheesy Smashed Potatoes:
- Boil the Potatoes: Bring a pot of salted water to a boil. Add baby potatoes and cook for 15-18 minutes until fork-tender. Drain and let cool slightly.
- Smash the Potatoes: Preheat the oven to 425°F (220°C). Place boiled potatoes on a greased baking sheet and gently smash them with a fork or potato masher.
- Season and Bake: Drizzle with olive oil, then sprinkle with salt, pepper, and garlic powder. Bake for 20-25 minutes until crispy.
- Add Cheese: Sprinkle cheddar and Parmesan over the potatoes and return to the oven for 5 minutes until melted and bubbly. Garnish with green onions or parsley.
- For the Garlic Butter Steak Bites:
- Season the Steak: In a bowl, toss the steak cubes with salt, pepper, and paprika.
- Sear the Steak: Heat olive oil in a large skillet over medium-high heat. Add steak in a single layer and cook for 2-3 minutes per side until browned. Work in batches if needed. Remove steak and set aside.
- Make the Garlic Butter: Reduce heat to medium, add butter, garlic, and thyme. Stir for 30 seconds until fragrant.
- Coat the Steak: Return steak to the skillet and toss in the garlic butter for 1 minute. Remove from heat and garnish with parsley.
