For the Shrimp Scampi Filling:
- 1 1/2 lbs shrimp, peeled and deveined (chopped if large)
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup white wine (or chicken broth)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
For the Cheese Layer:
- 1 (15 oz) container ricotta cheese
- 1 egg
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
For the Assembly:
- 12 lasagna noodles, cooked
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups heavy cream
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Cook the Shrimp Scampi – In a large skillet, melt butter over medium heat. Add garlic and cook for 30 seconds. Stir in red pepper flakes, then add shrimp and cook for 2-3 minutes per side until pink. Pour in white wine, salt, black pepper, and lemon juice, then simmer for 2 minutes. Remove from heat and stir in parsley. Set aside.
- Prepare the Cheese Mixture – In a bowl, mix ricotta, egg, Parmesan, Italian seasoning, and garlic powder until smooth.
- Make the Creamy Sauce – In a saucepan, heat heavy cream over medium heat. Add salt, black pepper, and ½ cup Parmesan cheese, stirring until smooth and slightly thickened. Remove from heat.
- Assemble the Lasagna –
- Spread a thin layer of creamy sauce on the bottom of a greased 9×13-inch baking dish.
- Layer 3 lasagna noodles, then spread ricotta mixture, followed by shrimp scampi and mozzarella cheese.
- Repeat the layers until all ingredients are used, ending with cheese and creamy sauce on top.
- Bake – Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake for 10 more minutes until golden and bubbly.
- Serve & Enjoy – Let rest for 10 minutes, then garnish with extra parsley and Parmesan. Serve warm!
Notes
- Use lobster or scallops instead of shrimp for extra seafood flavor.
- Add spinach or mushrooms for more texture.
- Swap white wine for extra broth if needed.
