- 1 lb carrots, peeled and cut into halves (or baby carrots)
- 3 tablespoons unsalted butter, melted
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme (or fresh thyme)
- 1/2 teaspoon paprika (optional, for color)
- 1 tablespoon honey or brown sugar (optional, for slight sweetness)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat & Prep
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper or foil.
2. Season the Carrots
- In a large bowl, toss carrots with melted butter, garlic, salt, pepper, thyme, paprika, and honey (if using).
- Spread the carrots evenly on the baking sheet in a single layer.
3. Roast the Carrots
- Roast for 20–25 minutes, flipping halfway through, until tender and caramelized.
4. Serve & Garnish
- Remove from the oven and sprinkle with fresh parsley before serving. Enjoy!
Notes
- For extra crispiness, broil the carrots for the last 2–3 minutes.
- Add a sprinkle of Parmesan cheese for a cheesy twist.
- Swap butter for olive oil to make it dairy-free.
