Description

These roasted carrots are coated in a rich garlic butter sauce and roasted until caramelized and tender. They make a perfect side for any meal, from holiday dinners to weeknight meals!


Ingredients

  • 1 lb carrots, peeled and cut into halves (or baby carrots)
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme (or fresh thyme)
  • 1/2 teaspoon paprika (optional, for color)
  • 1 tablespoon honey or brown sugar (optional, for slight sweetness)

 

  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preheat & Prep

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or foil.

2. Season the Carrots

  1. In a large bowl, toss carrots with melted butter, garlic, salt, pepper, thyme, paprika, and honey (if using).
  2. Spread the carrots evenly on the baking sheet in a single layer.

3. Roast the Carrots

  1. Roast for 20–25 minutes, flipping halfway through, until tender and caramelized.

4. Serve & Garnish

 

  1. Remove from the oven and sprinkle with fresh parsley before serving. Enjoy!

Notes

  • For extra crispiness, broil the carrots for the last 2–3 minutes.
  • Add a sprinkle of Parmesan cheese for a cheesy twist.
  • Swap butter for olive oil to make it dairy-free.
