Description
A one-pan meal featuring tender chicken bites and fresh asparagus coated in a delicious garlic butter sauce. Ready in just 20 minutes!
Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp onion powder
2 tbsp olive oil
For the Garlic Butter Sauce:
3 tbsp unsalted butter
4 cloves garlic, minced
1/2 tsp crushed red pepper flakes (optional)
1 tbsp fresh lemon juice
1 tbsp chopped parsley
For the Asparagus:
1 bunch asparagus, trimmed and cut into 2-inch pieces
1/2 tsp salt
1/4 tsp black pepper
Instructions
Season the Chicken – In a bowl, toss chicken with salt, pepper, paprika, and onion powder.
Cook the Chicken – Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove from the skillet and set aside.
Sauté the Asparagus – In the same skillet, add a little more olive oil if needed. Sauté asparagus with salt and pepper for 3-4 minutes until tender-crisp. Remove and set aside.
Make the Garlic Butter Sauce – Lower heat to medium. Melt butter in the skillet, then add garlic and red pepper flakes. Sauté for 30 seconds until fragrant. Stir in lemon juice and parsley.
Combine & Serve – Return chicken and asparagus to the skillet, tossing everything in the garlic butter sauce. Cook for 1-2 minutes, then serve warm!
Notes
- Make it spicy: Add extra red pepper flakes or a dash of cayenne.
- Add more veggies: Toss in bell peppers or cherry tomatoes for extra color.
- Meal prep: This dish stores well in the fridge for up to 3 days.
