Ingredients
- 12 oz (340 g) spaghetti
- 6 cloves garlic, thinly sliced
- 1/2 cup extra virgin olive oil
- 1 teaspoon red pepper flakes (adjust to taste)
- 1/4 cup fresh parsley, finely chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- Grated Parmesan cheese (optional)
- Lemon zest (optional, for garnish)
Instructions

Cook the pasta:
Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta. -
Prepare the garlic oil:
While the pasta cooks, heat the olive oil in a large pan over medium heat. Add the sliced garlic and cook until golden and fragrant, about 2–3 minutes. Be careful not to let it burn. -
Add spice:
Stir in the red pepper flakes and cook for another 30 seconds. -
Combine:
Add the drained pasta to the pan and toss well to coat. If the pasta seems dry, gradually add reserved pasta water until the desired consistency is reached. -
Finish and serve:
Mix in chopped parsley, season with salt and pepper, and garnish with Parmesan cheese or lemon zest if desired. Serve immediately.
