Description

These Easter Funfetti Cake Cookies are soft, chewy, and bursting with pastel sprinkles for a festive springtime treat! Made with a simple cake mix, these cookies are quick to make and perfect for Easter celebrations, baby showers, or anytime you want a fun and colorful dessert.


Ingredients

  • 1 box (15.25 oz) vanilla or white cake mix
  • 1/2 cup unsalted butter, melted (or 1/3 cup vegetable oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup pastel sprinkles (Easter colors)
  • 1/2 cup white chocolate chips (optional)

Instructions

  • Step 1: Preheat & Prep
  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • Step 2: Make the Dough
  • In a large bowl, mix together the cake mix, melted butter, eggs, and vanilla extract until fully combined.
  • Gently fold in the pastel sprinkles and white chocolate chips if using.
  • Step 3: Shape & Bake
  • Scoop tablespoon-sized balls of dough and place them 2 inches apart on the prepared baking sheet.
  • Bake for 9-11 minutes, or until the edges are set but the centers are still slightly soft.
  • Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Step 4: Decorate & Enjoy!
  • For extra Easter flair, drizzle with melted white chocolate and top with more pastel sprinkles!
