Instructions
Ingredients
For the Granola Base:
- 2 cups granola
- 2 tbsp honey (or maple syrup)
- 2 tbsp coconut oil (melted)
For the Yogurt Filling:
- 1 ½ cups Greek yogurt (or regular yogurt)
- 2 tbsp honey or maple syrup
- ½ tsp vanilla extract
Toppings (Optional):
- Fresh berries (strawberries, blueberries, raspberries)
- Chopped nuts
- Mini chocolate chips
- Coconut flakes
Notes
- Prepare the Granola Base: In a mixing bowl, combine granola, honey, and melted coconut oil. Stir until well coated.
- Form the Cups: Line a muffin tin with paper liners or lightly grease it. Divide the granola mixture evenly among 12 muffin cups. Use the back of a spoon to press it down firmly, creating a small well in the center.
- Freeze the Base: Place the muffin tin in the freezer for about 10-15 minutes to help the granola set.
- Make the Yogurt Filling: In another bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
- Fill the Cups: Remove the muffin tin from the freezer and spoon the yogurt mixture into each granola cup, filling them to the top.
- Add Toppings: Sprinkle fresh berries, nuts, or chocolate chips on top.
- Freeze Again: Place the muffin tin back in the freezer for at least 2 hours or until the yogurt is firm.
- Serve: Once frozen, remove the cups from the muffin tin and enjoy immediately, or store them in an airtight container in the freezer for up to 1 month.
