Description

A light, airy, and protein-packed bread made with cottage cheese and eggs. Perfect as a low-carb snack, sandwich base, or side!


Ingredients

  • 1/2 cup cottage cheese (full-fat or low-fat)
  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar (for stability)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder (for extra fluffiness, optional)

 

  • 1 teaspoon honey or sugar (optional, for slight sweetness)

Instructions

Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.

In a clean, dry bowl, beat egg whites and cream of tartar with an electric mixer until stiff peaks form.

In a separate bowl, mix egg yolks, cottage cheese, salt, baking powder, and honey (if using) until smooth.

Gently fold the egg white mixture into the cottage cheese mixture. Be careful not to deflate the batter.

Spoon the mixture onto the lined baking sheet, forming 6-8 small rounds.

Bake for 25-30 minutes, until golden brown and set.

Let cool for 5 minutes before serving. Enjoy warm or at room temperature!


Notes

For a savory twist, add garlic powder, Italian herbs, or shredded cheese.

For sweet cloud bread, add vanilla extract and a touch of cinnamon.

Store in an airtight container for up to 3 days or freeze for longer storage.
