Ingredients

Units Scale

For the Base:

  • 4 English muffins, split in half (makes 8 mini pizzas)
  • 1 tbsp butter (for toasting)

For the Toppings:

  • 4 large eggs, scrambled
  • 1/2 cup cooked breakfast sausage, crumbled (or bacon, diced)
  • 1/2 cup shredded cheddar cheese (or mozzarella)
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced tomatoes (optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

For Garnish (Optional):

  • Chopped green onions
  • Hot sauce
  • Crushed red pepper flakes

Instructions

Step 1: Toast the English Muffins

  1. Preheat oven to 375°F (190°C).
  2. Melt butter in a pan and lightly toast the English muffins until golden brown. (This keeps them crispy under the toppings!)

Step 2: Make the Scrambled Eggs

  1. In a bowl, whisk together eggs, salt, and pepper.
  2. Cook over medium heat, stirring gently, until just set. Remove from heat.

Step 3: Assemble the Pizzas

  1. Place toasted English muffins on a baking sheet.
  2. Layer the toppings:
    • Add a spoonful of scrambled eggs to each muffin.
    • Sprinkle with crumbled sausage or bacon.
    • Add cheese, bell peppers, and tomatoes (if using).

Step 4: Bake & Serve

  1. Bake for 8-10 minutes, or until the cheese is melted and bubbly.
  2. Remove from oven and garnish with green onions, hot sauce, or red pepper flakes.
  3. Serve warm and enjoy!

Notes

  • Make It Spicy: Add jalapeños or a drizzle of sriracha.
  • Cheese Options: Swap cheddar for Swiss, pepper jack, or feta.
  • Meal Prep: Assemble ahead of time and freeze for a quick breakfast option.
  • Storage: Store in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer for best results.
