Description

This Elote Dip is a creamy, smoky, and slightly spicy dip packed with sweet corn, tangy lime, and crumbled cotija cheese. It’s the perfect appetizer for parties, game days, or any time you need a crowd-pleasing dip!


Ingredients

  • 3 cups corn (fresh, canned, or frozen)

  • 1 tbsp butter (for sautéing)

  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)

  • 1/2 cup sour cream

  • 1/2 cup cotija cheese (crumbled) (or feta as a substitute)

  • 1 tsp chili powder

  • 1/2 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tbsp lime juice (freshly squeezed)

  • 1 tbsp cilantro (chopped, plus more for garnish)

  • 1 jalapeño (seeded & finely diced, optional for spice)

For Serving:

 

  • Extra cotija cheese for topping

  • Lime wedges

  • Tortilla chips or sliced veggies


Instructions

  • Cook the Corn:

    • Heat butter in a large skillet over medium-high heat.

    • Add corn and sauté for 5-7 minutes until lightly charred. Remove from heat.

  • Mix the Dip:

    • In a large bowl, combine mayonnaise, sour cream, cotija cheese, chili powder, smoked paprika, garlic powder, salt, black pepper, and lime juice. Stir until smooth.

 

  • Combine & Serve:

    • Add the charred corn and mix until well combined.

    • Stir in cilantro and jalapeño (if using).

    • Transfer to a serving bowl and garnish with extra cotija cheese, more cilantro, and a sprinkle of chili powder.

    • Serve warm or chilled with tortilla chips and lime wedges.


Notes

  • Make it spicy: Add extra jalapeño or a pinch of cayenne pepper.

  • Lighter option: Use Greek yogurt instead of mayo for a tangy, healthier version.

 

  • Cheese substitutes: Cotija cheese is traditional, but feta or Parmesan work well too!
