Description

These Beef and Pepper Rice Bowls are a perfect combination of tender beef, sautéed bell peppers, and a savory-sweet sauce served over fluffy rice. This easy meal is great for weeknights and comes together in 30 minutes or less!

For the Beef & Peppers:

  • 1 lb ground beef (or thinly sliced flank steak)
  • 1 tbsp olive oil (if using steak)
  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated (optional)
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for heat)

For the Sauce:

  • 1/4 cup soy sauce (low-sodium preferred)
  • 2 tbsp hoisin sauce (adds sweetness)
  • 1 tbsp rice vinegar
  • 1 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch + 2 tbsp water (for thickening)

For Serving:

  • 2 cups cooked white or brown rice
  • 1 tbsp sesame seeds (for garnish)
  • 2 tbsp green onions, chopped (for garnish)
