Description

This flavor-packed taco soup is made with ground beef, beans, corn, and tomatoes, all simmered in a perfectly spiced broth. It’s an easy, one-pot meal that’s ready in 30 minutes and perfect for meal prep!


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 1 can (15 oz) tomato sauce
  • 2 cups beef broth (or chicken broth)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 tsp cumin (optional, for extra flavor)
  • Optional Toppings:
  • Shredded cheddar cheese
  • Sour cream or Greek yogurt
  • Sliced avocado
  • Fresh cilantro
  • Crushed tortilla chips

Instructions

  • Cook the Beef: In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Sauté Aromatics: Add the diced onion and garlic, cooking for 2-3 minutes until softened.
  • Add Seasonings & Liquids: Stir in the taco seasoning, then add the beans, corn, diced tomatoes, tomato sauce, and broth. Mix well.
  • Simmer: Bring to a boil, then reduce heat and let simmer for 15-20 minutes, stirring occasionally.
  • Serve & Garnish: Ladle into bowls and top with your favorite taco toppings. Enjoy!

Notes

  • Spicy Version: Add diced jalapeños or a pinch of cayenne pepper.
  • Make It Creamy: Stir in 4 oz of cream cheese at the end for a creamy texture.
  • Slow Cooker Option: Brown the beef and onion first, then add everything to the slow cooker. Cook on low for 6 hours or high for 3-4 hours.
