- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet (1 oz) taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
- 1 can (15 oz) tomato sauce
- 2 cups beef broth (or chicken broth)
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 1 tsp cumin (optional, for extra flavor)
- Optional Toppings:
- Shredded cheddar cheese
- Sour cream or Greek yogurt
- Sliced avocado
- Fresh cilantro
- Crushed tortilla chips
Instructions
- Cook the Beef: In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
- Sauté Aromatics: Add the diced onion and garlic, cooking for 2-3 minutes until softened.
- Add Seasonings & Liquids: Stir in the taco seasoning, then add the beans, corn, diced tomatoes, tomato sauce, and broth. Mix well.
- Simmer: Bring to a boil, then reduce heat and let simmer for 15-20 minutes, stirring occasionally.
- Serve & Garnish: Ladle into bowls and top with your favorite taco toppings. Enjoy!
Notes
- Spicy Version: Add diced jalapeños or a pinch of cayenne pepper.
- Make It Creamy: Stir in 4 oz of cream cheese at the end for a creamy texture.
- Slow Cooker Option: Brown the beef and onion first, then add everything to the slow cooker. Cook on low for 6 hours or high for 3-4 hours.
