This taco casserole is a quick and hearty weeknight meal layered with seasoned beef, melty cheese, and crunchy tortilla chips. It’s like tacos baked into a warm, cheesy dish the whole family will love.
Ingredients

1 lb ground beef

1 small onion, chopped

1 packet taco seasoning (or 2 tablespoons homemade)

3/4 cup water

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies (undrained)

2 cups crushed tortilla chips

2 cups shredded cheddar cheese (or Mexican blend)

Optional toppings: sour cream, green onions, diced tomatoes, jalapeños, avocado, cilantro
Instructions
Preheat the oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Cook the beef:
In a large skillet over medium heat, cook the ground beef and chopped onion until browned. Drain excess fat.
Season the meat:
Add taco seasoning and water to the skillet. Stir to combine and simmer for 2–3 minutes until thickened.
Add beans and tomatoes:
Stir in black beans and the can of diced tomatoes with green chilies. Cook for another 2 minutes.
Assemble the casserole:
Spread half of the crushed tortilla chips in the bottom of the baking dish. Spoon the beef mixture over the chips. Top with shredded cheese, then sprinkle remaining chips on top.
Bake:
Bake uncovered for 20–25 minutes, or until the cheese is melted and bubbly.
Serve:
Let cool slightly before serving. Top with your favorite taco toppings.
