These St. Patrick’s Day Cookies are soft, chewy, and decorated in festive green to bring a little extra luck to your holiday! Whether you add green M&M’s, sprinkles, or a drizzle of white chocolate, these cookies are quick, easy, and perfect for kids and adults alike.

- For the Cookies:
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- For Decorating:
- Green sprinkles
- Green and white M&M’s (or chocolate chips)
- 1/2 cup white chocolate, melted (for drizzle, optional)
Instructions
- Preheat & Prep:
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Cream the Butter & Sugar:
- In a large bowl, beat butter and sugar until light and fluffy.
- Mix in egg and vanilla extract, stirring until smooth.
- Mix the Dry Ingredients:
- In a separate bowl, whisk together flour, baking soda, and salt.
- Combine & Fold in Mix-ins:
- Gradually add dry ingredients to the wet ingredients, mixing until just combined.
- Fold in green M&M’s or chocolate chips (if using).
- Scoop & Decorate:
- Scoop 1½ tablespoon-sized dough balls onto the baking sheet, spacing them 2 inches apart.
- Add green sprinkles or press extra M&M’s on top.
- Bake:
- Bake for 9–11 minutes, until edges are set but centers remain soft.
- Let cool on the pan for 5 minutes, then transfer to a wire rack.
- Optional Drizzle:
- Melt white chocolate and drizzle over the cooled cookies for an extra festive touch!
Notes
- For a minty twist, add ½ teaspoon peppermint extract to the dough.
- Want a shortcut? Use store-bought sugar cookie dough and just decorate!
