- For the Filling:
- 4 cups peaches, sliced (fresh or frozen, peeled if desired)
- 1 cup raspberries (fresh or frozen)
- 1/3 cup granulated sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- 1 tablespoon lemon juice
- For the Cobbler Topping:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 6 tablespoons unsalted butter, cold and cubed
- 1/3 cup milk (or heavy cream)
- 1 teaspoon vanilla extract
Instructions
- Preheat & Prep: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or a similar-sized oven-safe dish.
- Make the Fruit Filling: In a large bowl, combine peaches, raspberries, sugar, cornstarch, vanilla extract, cinnamon, and lemon juice. Toss to coat, then transfer the mixture to the baking dish.
- Prepare the Cobbler Topping: In a medium bowl, whisk together flour, sugars, baking powder, salt, and cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in milk and vanilla extract until a soft dough forms.
- Assemble: Drop spoonfuls of the dough over the fruit filling. Spread slightly but leave some gaps for the fruit to bubble through.
- Bake: Place in the oven and bake for 35-40 minutes, or until the topping is golden brown and the fruit filling is bubbly.
- Cool & Serve: Let the cobbler cool for 10-15 minutes before serving. Enjoy warm with vanilla ice cream or whipped cream!

- Frozen fruit? No need to thaw—just add 5 extra minutes to the baking time.
- Want extra crunch? Sprinkle coarse sugar on top before baking.
