Description

This peach and raspberry cobbler is an easy, classic dessert with a juicy fruit filling and a soft, golden biscuit topping. Made with fresh or frozen fruit, it’s the perfect sweet treat!

  • 4 cups peaches, sliced (fresh or frozen, peeled if desired)
  • 1 cup raspberries (fresh or frozen)
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 1 tablespoon lemon juice
  • For the Cobbler Topping:
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 6 tablespoons unsalted butter, cold and cubed
  • 1/3 cup milk (or heavy cream)
  • 1 teaspoon vanilla extract

Instructions

  • Preheat & Prep: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or a similar-sized oven-safe dish.
  • Make the Fruit Filling: In a large bowl, combine peaches, raspberries, sugar, cornstarch, vanilla extract, cinnamon, and lemon juice. Toss to coat, then transfer the mixture to the baking dish.
  • Prepare the Cobbler Topping: In a medium bowl, whisk together flour, sugars, baking powder, salt, and cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in milk and vanilla extract until a soft dough forms.
  • Assemble: Drop spoonfuls of the dough over the fruit filling. Spread slightly but leave some gaps for the fruit to bubble through.
  • Bake: Place in the oven and bake for 35-40 minutes, or until the topping is golden brown and the fruit filling is bubbly.
  • Cool & Serve: Let the cobbler cool for 10-15 minutes before serving. Enjoy warm with vanilla ice cream or whipped cream!

  • Frozen fruit? No need to thaw—just add 5 extra minutes to the baking time.
