- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup buttermilk (or regular milk + 1 tsp vinegar)
- 1 large egg
- 2 tbsp melted butter
- 1/2 tsp vanilla extract
- Cooking spray or extra butter (for greasing)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray or butter.
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the buttermilk, egg, melted butter, and vanilla.
- Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. (Don’t overmix!)
- Spoon batter into the mini muffin tin, filling each cup about ¾ full.
- Bake for 10-12 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Let cool for a few minutes, then remove from the tin.
- Serve warm with maple syrup, powdered sugar, or fruit. Enjoy!
