Description

These bite-sized pancake poppers are fluffy, golden, and perfect for breakfast or a quick snack! Made with simple ingredients, they cook up fast and pair perfectly with syrup, fruit, or your favorite toppings.

Ingredients

Units Scale

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup buttermilk (or regular milk + 1 tsp vinegar)
  • 1 large egg
  • 2 tbsp melted butter
  • 1/2 tsp vanilla extract
  • Cooking spray or extra butter (for greasing)

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a mini muffin tin with cooking spray or butter.
  • In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk the buttermilk, egg, melted butter, and vanilla.
  • Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. (Don’t overmix!)
  • Spoon batter into the mini muffin tin, filling each cup about ¾ full.
  • Bake for 10-12 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  • Let cool for a few minutes, then remove from the tin.
  • Serve warm with maple syrup, powdered sugar, or fruit. Enjoy!

Notes

  • Add-ins: Try adding mini chocolate chips, blueberries, or cinnamon for extra flavor.
  • Storage: Store leftovers in an airtight container for up to 3 days or freeze for later.
  • Reheating: Pop them in the microwave for 10-15 seconds to warm them up.
