Description

This creamy One Pan Chicken Stroganoff is a quick and comforting twist on the classic beef version. Tender chicken pieces are cooked in a rich, flavorful mushroom sauce with garlic, onions, and a touch of sour cream. Everything comes together in one pan for easy cleanup, making it a perfect weeknight dinner. Serve it over egg noodles, rice, or mashed potatoes for a complete meal.

Ingredients

Units Scale
  • :
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 pound boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 2 teaspoons Dijon mustard
  • 1/2 cup milk or heavy cream
  • Fresh parsley, for garnish
  • Cooked egg noodles or rice, for serving

Instructions

  • :
  • Sear the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Season the chicken with salt and pepper, then add it to the pan. Cook for 4-5 minutes until golden brown, then remove and set aside.
  • Sauté the Aromatics: In the same pan, add the onions and mushrooms. Cook for 4-5 minutes until softened. Stir in the garlic, paprika, and thyme, and cook for another 30 seconds.
  • Make the Sauce: Sprinkle flour over the mushrooms and stir well. Slowly pour in the chicken broth, stirring continuously to prevent lumps. Let it simmer for 2-3 minutes until slightly thickened.
  • Finish the Dish: Stir in the sour cream, Dijon mustard, and milk (or heavy cream). Add the cooked chicken back to the pan and let it simmer for 5 more minutes until the sauce is creamy and the chicken is fully cooked.
  • Serve: Garnish with fresh parsley and serve over egg noodles, rice, or mashed potatoes.

Notes

  • :
  • For extra richness, use heavy cream instead of milk.
  • Swap sour cream with Greek yogurt for a lighter version.
  • Add a splash of white wine for additional depth of flavor.
