Description

These Greek Yogurt Waffles are light, crispy, and naturally high in protein thanks to Greek yogurt. They’re perfect for a quick, wholesome breakfast and can be topped with fruit, syrup, or nut butter!


Ingredients

1 1/2 cups (190g) all-purpose flour (or whole wheat flour)

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp cinnamon (optional)

3/4 cup (180g) Greek yogurt (plain or vanilla)

3/4 cup (180ml) milk (dairy or plant-based)

2 large eggs

2 tbsp melted butter or coconut oil

1 tbsp honey or maple syrup

1 tsp vanilla extract


Instructions

Step 1: Preheat Waffle Iron

  1. Preheat your waffle iron and lightly grease with oil or cooking spray.

Step 2: Mix Dry Ingredients

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

Step 3: Mix Wet Ingredients

  1. In another bowl, whisk together Greek yogurt, milk, eggs, melted butter, honey, and vanilla extract until smooth.

Step 4: Combine Batter

  1. Gradually mix the wet ingredients into the dry ingredients, stirring until just combined (do not overmix).

Step 5: Cook the Waffles

  1. Pour batter into the preheated waffle iron (about ½ cup per waffle).
  2. Cook according to your waffle maker’s instructions (usually 3-5 minutes), until golden brown and crispy.
