Description

These Easy Croissant Breakfast Sandwiches are a delicious and satisfying way to start your day! Buttery, flaky croissants are filled with fluffy eggs, melty cheese, and crispy bacon or sausage for the perfect grab-and-go breakfast. Great for meal prep or a special weekend brunch!


Ingredients

  • 4 large croissants, sliced in half
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices cheddar cheese (or Swiss, provolone, or American)
  • 4 slices bacon, cooked (or 4 breakfast sausage patties)
  • 1 tablespoon butter
  • Optional: 1/2 avocado, sliced, or 1 tablespoon mayo

Instructions

  • Step 1: Cook the Eggs
  • In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Heat a nonstick skillet over medium heat and melt butter.
  • Pour in the egg mixture and cook, stirring occasionally, until soft and fluffy. Remove from heat.
  • Step 2: Assemble the Sandwiches
  • Preheat the oven to 350°F (175°C) (optional, for toasting).
  • If desired, lightly toast the croissants in the oven for 5 minutes to warm them up.
  • Layer each croissant with a slice of cheese, followed by the scrambled eggs, and top with bacon or sausage.
  • If using, add avocado slices or a spread of mayo for extra flavor.
  • Step 3: Melt the Cheese (Optional)
  • If you like extra melty cheese, place the assembled sandwiches back in the oven for 3–5 minutes until the cheese melts.
  • Step 4: Serve & Enjoy
  • Serve warm and enjoy!

Notes

  • Make-Ahead Tip: Wrap the assembled sandwiches in foil and store in the fridge for up to 3 days. Reheat in the oven at 325°F (160°C) for 10 minutes or microwave for 30–45 seconds.
