This Easy Crockpot Cilantro Lime Chicken is a fresh, zesty, and super simple slow cooker meal. Juicy chicken breasts are slow-cooked with lime juice, garlic, and cilantro for a flavorful, tender result. Perfect for tacos, burrito bowls, salads, or served over rice!
Ingredients

2 lbs boneless, skinless chicken breasts

1/2 cup fresh lime juice (about 4 limes)

1/2 cup chicken broth

1/2 cup chopped fresh cilantro

4 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Optional toppings: extra cilantro, lime wedges, avocado, sour cream
Instructions

Place chicken breasts in the bottom of the crockpot.

In a small bowl, whisk together lime juice, chicken broth, garlic, cumin, chili powder, salt, pepper, and olive oil.

Pour the mixture over the chicken.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and easy to shred.

Shred the chicken with two forks directly in the slow cooker.

Stir in chopped cilantro just before serving.

Serve over rice, in tacos, burrito bowls, or with your favorite sides.

You can use chicken thighs instead of breasts for extra flavor.
