Description

Here’s a simple and delicious recipe for Easy Chicken Parmesan—a classic Italian-American dish featuring breaded chicken breasts topped with marinara sauce and melted mozzarella cheese. It’s perfect for a comforting weeknight dinner.

Ingredients

  • 2 large boneless, skinless chicken breasts

  • Salt and freshly ground black pepper, to taste

  • 1/2 cup all-purpose flour

  • 2 large eggs

  • 1 cup panko breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon garlic powder

  • 1 teaspoon Italian seasoning

  • 1/4 cup olive oil

  • 1 cup marinara sauce

  • 1 cup shredded mozzarella cheese

  • Fresh basil leaves, for garnish (optional)

  • Cooked spaghetti or your choice of pasta, for serving

Instructions

  • Prepare the Chicken:

    • Preheat your oven to 400°F (200°C).

    • Slice each chicken breast horizontally to create two thinner cutlets.

    • Season both sides of the chicken cutlets with salt and pepper.

  • Set Up Breading Stations:

    • Place the flour in a shallow dish.

    • In a separate shallow dish, beat the eggs.

    • In a third dish, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, and Italian seasoning.

  • Bread the Chicken:

    • Dredge each chicken cutlet in the flour, shaking off excess.

    • Dip into the beaten eggs, ensuring full coverage.

    • Coat thoroughly with the breadcrumb mixture, pressing gently to adhere.

  • Cook the Chicken:

    • Heat olive oil in a large oven-safe skillet over medium-high heat.

    • Add the breaded chicken cutlets and cook for 2-3 minutes per side until golden brown.

    • Remove from heat.

  • Assemble and Bake:

    • Spoon marinara sauce over each chicken cutlet.

    • Sprinkle shredded mozzarella cheese on top.

    • Transfer the skillet to the preheated oven and bake for 10-15 minutes, until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (74°C).

  • Serve:

    • Garnish with fresh basil leaves if desired

    • Serve over cooked spaghetti or your preferred pasta.

Notes

  • Chicken Thickness: Pounding the chicken to an even thickness ensures even cooking.Bon Appétit

  • Baking Alternative: For a healthier option, after breading, place the chicken on a baking sheet lined with parchment paper, spray lightly with cooking spray, and bake at 400°F (200°C) for 20-25 minutes until cooked through.

  • Sauce and Cheese: Adjust the amount of marinara and cheese to your preference.
