Description

These Cheesy Chicken Bacon Ranch Quesadillas are packed with juicy chicken, crispy bacon, gooey melted cheese, and creamy ranch dressing, all grilled between crispy tortillas. They make a perfect quick lunch, dinner, or game-day snack!


Ingredients

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup ranch dressing
  • 4 large flour tortillas
  • 1 tbsp butter or olive oil (for cooking)
  • 1 tbsp chopped green onions (optional, for garnish)

Instructions

Prepare the Filling:

 

In a bowl, mix shredded chicken, crumbled bacon, ranch dressing, and both cheeses.

Assemble the Quesadillas:

 

Lay a tortilla flat and spread half of the filling evenly over one side.

Fold the tortilla in half, pressing down lightly. Repeat with remaining tortillas.

Cook the Quesadillas:

 

Heat butter or oil in a large skillet over medium heat.

Cook each quesadilla for about 2-3 minutes per side, until golden brown and the cheese is melted.

Serve & Enjoy:

 

Slice into wedges and serve warm. Garnish with green onions if desired.

Serve with extra ranch, sour cream, or salsa for dipping!
