1 tbsp lemon juice
2 cups shredded Swiss cheese (like Gruyère or Emmental)

1 tbsp cornstarch
1/2 tsp Dijon mustard
1/4 tsp ground nutmeg
1/4 tsp black pepper
1 tbsp kirsch (optional, for traditional flavor)
For Dipping:
Cubed crusty bread (like baguette or sourdough)
Steamed or raw vegetables (broccoli, cauliflower, carrots, bell peppers)
Apple slices
Cooked sausage or ham cubes
Pretzels
Instructions
- Prepare the pot: Rub the inside of a fondue pot or heavy saucepan with the cut side of the garlic clove. Discard the garlic.
- Heat the wine: Pour the white wine and lemon juice into the pot and bring to a simmer over medium heat.
- Melt the cheese: In a bowl, toss the shredded cheeses with cornstarch until evenly coated. Gradually add small handfuls of cheese to the pot, stirring constantly until melted and smooth.
- Season: Stir in Dijon mustard, nutmeg, and black pepper. If using, add the kirsch for extra depth of flavor.
- Serve: Keep warm over low heat or a fondue burner. Serve immediately with dippers.
Notes
- If the fondue is too thick, add a splash of warm wine.
- If it’s too thin, mix ½ tsp cornstarch with 1 tbsp wine, then stir it in.
- No wine? Use low-sodium chicken broth instead.
