- 2 tbsp unsalted butter
- 3 tbsp brown sugar
- 1/2 tsp cinnamon
- 1 tsp lemon juice
- 1 tsp cornstarch
- 1 tbsp water
For the Turnovers:
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- 1 tbsp milk (for egg wash)
For the Glaze (Optional):
- 1/2 cup (60g) powdered sugar
- 1 tbsp milk or heavy cream
- 1/2 tsp vanilla extract

Prepare the Apple Filling:
- Cook the apples: In a saucepan over medium heat, melt butter, then add diced apples, brown sugar, cinnamon, and lemon juice. Cook for about 5 minutes, until apples are slightly softened.
- Thicken the filling: In a small bowl, mix cornstarch and water. Stir into the apple mixture and cook for another 1-2 minutes, until thickened. Remove from heat and let cool.
Assemble the Turnovers:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface. Cut into 4 equal squares.
- Fill and fold: Spoon about 1-2 tablespoons of apple filling onto one half of each square, leaving space around the edges. Fold into a triangle shape, pressing edges to seal.
- Crimp edges: Use a fork to press the edges together. Cut a small slit on top of each turnover to release steam.
- Egg wash: Whisk egg and milk together, then brush over the turnovers for a golden, flaky crust.
- Bake for 18-20 minutes, or until golden brown and puffy.
Make the Glaze (Optional):
- Mix the glaze: Whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle over warm turnovers before serving.
