Ingredients
Units
Scale
- 4 tbsp unsalted butter
- 6 cloves garlic, minced (or roasted for a sweeter, mellow flavor)
- 2 tbsp all-purpose flour
- 1 1/2 cups whole milk (or half-and-half for extra creaminess)
- 1 cup freshly grated Parmesan cheese
- 1/2 cup grated mozzarella cheese (optional, for extra creaminess)
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional, for a little heat)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Melt & Sauté:
In a medium saucepan, melt the butter over medium heat.
Add the minced garlic and cook until fragrant and slightly golden, about 1 minute. - Make the Roux:
Stir in the flour and cook for another 1–2 minutes to form a light roux. This helps thicken the sauce. - Add Milk:
Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture starts to thicken (about 3–4 minutes). - Cheese Magic:
Reduce the heat to low. Stir in the Parmesan cheese and mozzarella (if using) until melted and smooth.
Season with Italian seasoning, red pepper flakes (if using), salt, and black pepper to taste. - Serve:
Remove from heat and garnish with fresh parsley.
Serve warm over pasta, as a dip for breadsticks, drizzled over roasted veggies, or as a creamy sauce for chicken or seafood.
Notes
- Roasted Garlic Twist: Roast the garlic beforehand for a sweeter, richer flavor.
- Make It a Dip: Thicken the sauce by adding extra cheese or reducing the milk slightly for a cheesy dip perfect with bread or veggies.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently, adding a splash of milk if needed.
