- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 3/4 cup water
- 1 can (10 oz) Rotel tomatoes (diced tomatoes with green chilies)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1/2 cup sour cream
- 1 cup salsa
- 2 cups shredded cheddar cheese (divided)
- 3 cups Nacho Cheese Doritos, crushed
- 1/2 cup black olives, sliced (optional)
- 2 green onions, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook the beef: In a large skillet over medium heat, cook the ground beef and diced onion until the meat is browned and the onions are soft. Drain any excess grease.
- Season the beef: Add taco seasoning and water, stirring to combine. Simmer for 2-3 minutes until thickened.
- Mix the filling: Stir in Rotel tomatoes, black beans, cream of mushroom soup, sour cream, and salsa. Cook for 2-3 minutes, then remove from heat.
- Layer the casserole: Spread half of the crushed Doritos in the bottom of the baking dish. Spoon half of the beef mixture over the chips. Sprinkle 1 cup of shredded cheese. Repeat layers.
- Bake for 25 minutes until bubbly and heated through.
- Add toppings: Sprinkle with the remaining crushed Doritos, black olives (if using), and green onions. Bake for an additional 5 minutes.
- Serve hot and enjoy!

- Swap out the ground beef for ground turkey or shredded chicken for a lighter option.
- For extra heat, add jalapeños or use spicy taco seasoning.
