Dark Chocolate Coconut Bites

Description

These rich, chewy bites are made with just a few ingredients: shredded coconut, maple syrup, and dark chocolate. They’re naturally sweet, perfectly poppable, and store beautifully in the fridge or freezer!


Ingredients

(makes about 12 bites)

 

  • 1 1/2 cups unsweetened shredded coconut

  • 1/4 cup coconut oil, melted

  • 3 tbsp maple syrup (or honey)

  • 1 tsp vanilla extract

  • Pinch of salt

  • 3/4 cup dark chocolate chips (at least 70% cocoa)

  • 1 tsp coconut oil (for melting chocolate)


Instructions

  1. Mix the coconut base:
    In a bowl, combine shredded coconut, melted coconut oil, maple syrup, vanilla, and a pinch of salt. Stir until the mixture is sticky and well combined.

  2. Shape the bites:
    Scoop out about 1 tablespoon of the mixture and press it firmly into balls or small mounds using your hands or a silicone mold. Place on a parchment-lined baking sheet.

  3. Chill:
    Freeze the coconut bites for 20–30 minutes, or until firm.

  4. Melt the chocolate:
    In a microwave-safe bowl or over a double boiler, melt the dark chocolate chips with 1 tsp coconut oil, stirring until smooth.

  5. Dip or drizzle:
    Dip each chilled coconut bite halfway into the melted chocolate, or drizzle the chocolate over the top using a spoon.

  6. Set & store:
    Place the bites back on the parchment-lined sheet and refrigerate until the chocolate hardens (about 15 minutes). Store in an airtight container in the fridge for up to 1 week or freezer for up to 1 month.


Notes

  • Add a pinch of sea salt on top of the chocolate before it sets for a sweet-salty finish.

  • Want extra crunch? Mix in some chopped almonds or cashews with the coconut mixture.

 

  • Make it extra indulgent: Use a bit of espresso powder in the chocolate for a mocha vibe!
