Description
This refreshing homemade dandelion soda is naturally fermented using a ginger bug. It’s a fizzy, probiotic-rich drink with a slightly sweet, earthy flavor and floral notes from foraged dandelion petals. A fun and healthy springtime project!
Ingredients

2 cups dandelion petals (green parts removed)

1 quart water

1/2-1 cup sugar (to taste)

Juice of 1 lemon

1/4 cup active ginger bug (strained)

Optional: additional lemon slices or herbs for flavor
Instructions

Make the Dandelion Infusion:
Place dandelion petals and water in a saucepan. Bring to a boil, then remove from heat. Let steep for about 30–60 minutes. -
Strain and Sweeten:
Strain out the petals and pour the liquid into a clean glass jar or pitcher. While still warm, stir in the sugar until dissolved. -
Add Lemon and Ginger Bug:
Once the mixture is room temperature, stir in the lemon juice and the strained ginger bug. -
Ferment:
Pour the mixture into flip-top bottles or jars, leaving some headspace. Seal and let ferment at room temperature for 2–5 days. Check daily for pressure buildup. -
Refrigerate and Enjoy:
Once it’s bubbly and carbonated to your liking, move it to the fridge. Chill before serving.
