Description

This refreshing salad is a medley of crisp cucumbers, juicy tomatoes, and creamy avocado, all tossed in a light and zesty dressing. Perfect as a side dish for any meal or a light lunch, this salad is full of vibrant flavors and healthy goodness.

Ingredients

Units Scale
    • 2 cups cucumber, diced
    • 2 cups cherry or grape tomatoes, halved
    • 2 medium avocados, diced
    • 1/4 cup red onion, thinly sliced
    • 2 tablespoons fresh parsley or cilantro, chopped
  • For the Dressing:
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice (or lime juice)
    • 1 teaspoon red wine vinegar (optional)
    • 1/2 teaspoon garlic powder
    • Salt and black pepper to taste

Instructions

  • Prepare the Ingredients:
Dice the cucumber, tomatoes, and avocados into bite-sized pieces. Thinly slice the red onion. Chop the parsley or cilantro.
  • Make the Dressing:
In a small bowl, whisk together olive oil, lemon juice, red wine vinegar (if using), garlic powder, salt, and pepper. Adjust seasonings to taste.
  • Assemble the Salad:
In a large mixing bowl, combine the cucumber, tomatoes, avocado, red onion, and parsley or cilantro. Drizzle the dressing over the salad and gently toss to combine.
  • Serve:
Serve immediately for the freshest taste. If making ahead, add the avocado just before serving to prevent browning.

Notes

  • You can substitute lime juice for lemon juice for a different twist.
  • For extra crunch, add a handful of toasted nuts or seeds.
  • To make it a complete meal, toss in cooked chicken, shrimp, or chickpeas
