This refreshing cucumber salad is light, crisp, and perfect for warm days. It’s made with fresh cucumbers, a tangy vinegar-based dressing, and simple seasonings, making it a quick side dish that complements any meal.


Ingredients

  • 2 large cucumbers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup white vinegar
  • 2 tablespoons sugar
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped (optional)

Instructions

 

  1. In a large bowl, combine the sliced cucumbers and red onions.
  2. In a small bowl, whisk together the white vinegar, sugar, olive oil, salt, and black pepper until the sugar dissolves.
  3. Pour the dressing over the cucumbers and onions, tossing to coat evenly.
  4. Add chopped dill if using, and stir gently.
  5. Cover and refrigerate for at least 30 minutes to let the flavors meld.
