Description

This refreshing cucumber salad with blueberries is light, crisp, and perfect for summer. It’s a beautiful mix of sweet and savory, with a tangy dressing that brings everything together. Serve it as a side dish at picnics, barbecues, or light lunches.


Ingredients

  • 2 cups cucumber, thinly sliced

  • 1 cup fresh blueberries

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup crumbled feta cheese

  • 2 tablespoons chopped fresh mint

  • 2 tablespoons olive oil

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon honey

 

  • Salt and pepper, to taste


Instructions

    1. In a large bowl, combine the sliced cucumber, blueberries, red onion, feta, and mint.

    2. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.

    3. Pour the dressing over the salad and toss gently to combine.

    4. Chill for 10–15 minutes before serving, if desired.

 


Notes

  • English cucumbers work great for this recipe.

  • You can substitute goat cheese for feta if preferred.

  • Add chopped walnuts or almonds for extra crunch.

  • Best served fresh the day it’s made.
