Description

These Cucumber, Mint and Lime Refreshers are light, crisp, and super refreshing. Made with fresh cucumber juice, zesty lime, and cooling mint, this hydrating drink is perfect for summer days, spa vibes, or as a pretty party mocktail.

 


Ingredients

  • 1 large cucumber, peeled and chopped

  • 1/4 cup fresh lime juice (about 2 limes)

  • 2 tablespoons honey or simple syrup (adjust to taste)

  • 1/4 cup fresh mint leaves

  • 2 cups cold water or sparkling water

  • Ice, for serving

 

  • Lime slices and cucumber ribbons or wheels, for garnish


Instructions

  • Add cucumber, lime juice, honey (or simple syrup), and mint leaves to a blender. Blend until smooth.

  • Strain through a fine mesh sieve into a pitcher to remove pulp (optional, for a smoother drink).

  • Stir in cold water or sparkling water.

  • Taste and adjust sweetness or lime as needed.

 

  • Serve over ice in glasses. Garnish with extra mint, lime slices, or cucumber ribbons.


Notes

  • Want a stronger mint flavor? Muddle the mint before blending.

  • Turn this into a cocktail by adding a splash of gin, vodka, or rum.

 

  • For a fun twist, add a splash of coconut water or top with flavored sparkling water.
