Ingredients

Units Scale

For the Cookies:

  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp red food coloring
  • 1 1/4 cups (160g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (85g) white chocolate chips

For the Cream Cheese Frosting:

  • 4 oz (113g) cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 1/2 tsp vanilla extract

Instructions

Make the Cookies:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg, vanilla extract, and red food coloring until well combined.
  4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in white chocolate chips.
  6. Scoop cookie dough into large balls (about 3 tbsp each) and place them on the baking sheet, spacing them apart.
  7. Bake for 10-12 minutes or until the edges are set but the centers are soft. Let cool on the pan for 5 minutes before transferring to a wire rack.

Make the Frosting:

  1. Beat together cream cheese and butter until smooth.
  2. Add powdered sugar and vanilla extract, mixing until fluffy.
  3. Frost the cooled cookies and optionally sprinkle with extra white chocolate shavings or red velvet crumbs.

Notes

  • Store cookies in an airtight container in the fridge for up to 5 days.
  • Let the cookies sit at room temperature before serving for the best texture.
  • If you prefer a deeper red color, add more food coloring as needed.
  • Use a piping bag for a bakery-style frosting swirl!
