Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 1/2 lbs baby potatoes, halved
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup chicken broth
  • 1/2 cup sour cream (or cream cheese)
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tbsp butter, sliced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • 1/2 cup cooked bacon bits (optional, for topping)
  • 1/4 cup chopped fresh parsley or green onions (for garnish)

Instructions

  • Prepare the ingredients: Place the baby potatoes in the bottom of the crockpot.
  • Season the chicken: Season chicken breasts with ranch seasoning, garlic powder, onion powder, black pepper, and paprika.
  • Assemble the crockpot: Lay the seasoned chicken on top of the potatoes. Pour chicken broth over everything, then dot with butter slices.
  • Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and potatoes are soft.
  • Shred and mix: Remove the chicken and shred it with two forks. Stir in sour cream and cheddar cheese, then mix everything together.
  • Serve and enjoy: Garnish with bacon bits and fresh parsley or green onions. Serve warm!

Notes

  • For extra creaminess, use cream cheese instead of sour cream.
  • Want a complete meal? Add green beans or carrots to the crockpot.
