Description

This easy Crockpot black-eyed peas recipe is a delicious Southern classic. Slow-cooked to perfection with ham or smoked sausage, seasonings, and spices, it’s a comforting dish ideal for New Year’s Day or any time of year.


Ingredients

  • 1 lb dried black-eyed peas
  • 4 cups chicken broth (or vegetable broth)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 smoked ham hock or 2 smoked sausages, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp dried thyme
  • 2 bay leaves

Instructions

  • Rinse the Peas: Rinse the dried black-eyed peas under cold water and remove any debris.
  • Combine Ingredients: Add all ingredients to the Crockpot (black-eyed peas, broth, onion, garlic, ham hock or sausages, salt, pepper, paprika, cayenne, thyme, and bay leaves).
  • Cook: Cover and cook on low for 6-8 hours or until the peas are tender and the flavors have melded together.
  • Serve: Remove the ham hock, shred the meat, and return it to the Crockpot before serving.

  • For extra flavor, add a splash of hot sauce or vinegar to taste before serving.
  • You can substitute smoked turkey or bacon for the ham hock or sausage.
