- 4 cups chicken broth (or vegetable broth)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock or 2 smoked sausages, sliced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- 1 tsp dried thyme
- 2 bay leaves

- Rinse the Peas: Rinse the dried black-eyed peas under cold water and remove any debris.
- Combine Ingredients: Add all ingredients to the Crockpot (black-eyed peas, broth, onion, garlic, ham hock or sausages, salt, pepper, paprika, cayenne, thyme, and bay leaves).
- Cook: Cover and cook on low for 6-8 hours or until the peas are tender and the flavors have melded together.
- Serve: Remove the ham hock, shred the meat, and return it to the Crockpot before serving.
