Description

This Crock Pot Poor Man’s Stew is a budget-friendly, hearty meal made with simple ingredients. Tender ground beef, potatoes, carrots, and a rich tomato-based broth come together for a comforting dish that’s easy to make and full of flavor. Just toss everything in the slow cooker and let it do the work!

Ingredients

Units Scale
  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 3 large carrots, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 1/2 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • 1 bay leaf

Instructions

  • Brown the beef: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain excess grease.
  • Layer the ingredients: Add the diced potatoes, carrots, and garlic to the crock pot. Pour in the beef, followed by tomato sauce, diced tomatoes, and beef broth.
  • Season & stir: Stir in Worcestershire sauce, Italian seasoning, salt, pepper, paprika, and add the bay leaf. Mix everything well.
  • Slow cook: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the vegetables are tender.
  • Serve & enjoy: Remove the bay leaf, give everything a good stir, and serve warm.

Notes

  • Substitute ground turkey or chicken for a lighter option.
  • Add frozen peas or green beans in the last 30 minutes for extra veggies.
  • Serve with crusty bread for a complete meal.
