Description

A hearty and creamy slow cooker soup made with ground beef, potatoes, and vegetables in a rich, flavorful broth.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups beef broth (or chicken broth)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika (optional)
  • 1 can (10 oz) diced tomatoes, drained (optional)
  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded cheddar cheese (optional, for extra creaminess)
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
  • Fresh parsley for garnish

Instructions

  • 1. Brown the Beef:
  • In a skillet over medium-high heat, cook ground beef until browned.
  • Add diced onion and garlic, sauté for 2 minutes. Drain excess grease.
  • 2. Add to Crock Pot:
  • Transfer beef mixture to the crock pot.
  • Add potatoes, carrots, celery, broth, salt, pepper, Italian seasoning, and smoked paprika.
  • Stir well, cover, and cook on:
  • LOW for 6-8 hours or
  • HIGH for 3-4 hours, until potatoes are tender.
  • 3. Finish the Soup:
  • Stir in heavy cream and shredded cheese (if using).
  • If you want a thicker soup, mix cornstarch and water in a small bowl and stir it in. Let cook for 10 more minutes.
  • 4. Serve & Enjoy:
  • Ladle into bowls and garnish with fresh parsley. Serve warm with crusty bread or crackers!

Notes

  • :
  • Want it extra creamy? Add an extra ½ cup of heavy cream.
  • Make it lighter: Use milk instead of cream, or swap ground beef for ground turkey.
  • Add more veggies: Peas, corn, or green beans work great!
