A hearty and creamy slow cooker soup made with ground beef, potatoes, and vegetables in a rich, flavorful broth.

- 1 lb ground beef (or turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups beef broth (or chicken broth)
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika (optional)
- 1 can (10 oz) diced tomatoes, drained (optional)
- 1 cup heavy cream (or half-and-half)
- 1 cup shredded cheddar cheese (optional, for extra creaminess)
- 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
- Fresh parsley for garnish
Instructions
- 1. Brown the Beef:
- In a skillet over medium-high heat, cook ground beef until browned.
- Add diced onion and garlic, sauté for 2 minutes. Drain excess grease.
- 2. Add to Crock Pot:
- Transfer beef mixture to the crock pot.
- Add potatoes, carrots, celery, broth, salt, pepper, Italian seasoning, and smoked paprika.
- Stir well, cover, and cook on:
- LOW for 6-8 hours or
- HIGH for 3-4 hours, until potatoes are tender.
- 3. Finish the Soup:
- Stir in heavy cream and shredded cheese (if using).
- If you want a thicker soup, mix cornstarch and water in a small bowl and stir it in. Let cook for 10 more minutes.
- 4. Serve & Enjoy:
- Ladle into bowls and garnish with fresh parsley. Serve warm with crusty bread or crackers!

- Want it extra creamy? Add an extra ½ cup of heavy cream.
- Make it lighter: Use milk instead of cream, or swap ground beef for ground turkey.
- Add more veggies: Peas, corn, or green beans work great!
