These Crispy Roasted Chickpeas are crunchy, flavorful, and totally snackable. They’re easy to make with just a few ingredients and are perfect for tossing on salads, soups, or enjoying by the handful.
Ingredients
- 1 (15 oz) can chickpeas (garbanzo beans), drained and rinsed
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika (smoked or sweet)
- 1/4 teaspoon salt (more to taste)
- Optional: cumin, chili powder, curry powder, or other spices

Preheat Oven:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. -
Dry the Chickpeas:
Pat the chickpeas very dry with a clean towel or paper towel. Removing moisture helps them get crisp. -
Season:
In a bowl, toss the chickpeas with olive oil, garlic powder, paprika, and salt. Add other spices if you’d like! -
Roast:
Spread chickpeas in a single layer on the baking sheet. Roast for 30–40 minutes, shaking the pan halfway through, until golden and crispy.

Cool & Crunch:
Let them cool completely—this helps them crisp up even more.
Notes
For extra crispiness, roast them plain for 10 minutes, then toss with oil and spices and finish roasting.
Store in an open bowl or container at room temp. They’ll stay crisp for a day or two.
