This Crispy Roasted Cauliflower is perfectly seasoned, roasted to golden perfection, and topped with melty cheddar and Parmesan cheese. It’s an easy, low-carb side dish that’s packed with flavor and crunch. Serve it as a side, snack, or even as a cheesy appetizer!

- 1 large head of cauliflower, cut into florets
- 2 tbsp olive oil (or melted butter)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika (optional, for extra flavor)
- 1/4 cup grated Parmesan cheese
- 1/2 cup shredded sharp cheddar cheese
- 1 tbsp chopped fresh parsley (for garnish)
Instructions
1. Preheat & Prep
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper or lightly grease it.
2. Season the Cauliflower
- In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, garlic powder, and smoked paprika.
- Spread them evenly on the baking sheet.
3. Roast the Cauliflower
- Roast for 20-25 minutes, flipping halfway through, until the edges are golden brown and crispy.
4. Add the Cheese
- Sprinkle the Parmesan cheese over the cauliflower and roast for another 5 minutes.
- Remove from the oven, then sprinkle the cheddar cheese on top.
- Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
5. Serve & Garnish
- Remove from the oven and sprinkle with fresh parsley.
- Serve hot and enjoy!

- Extra Crispy Tip: Toss the cauliflower in 1 tbsp cornstarch before roasting for extra crunch.
- Spicier Version: Add ½ tsp red pepper flakes or a drizzle of hot sauce before serving.
