Description

This Crispy Roasted Cauliflower is perfectly seasoned, roasted to golden perfection, and topped with melty cheddar and Parmesan cheese. It’s an easy, low-carb side dish that’s packed with flavor and crunch. Serve it as a side, snack, or even as a cheesy appetizer!


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tbsp olive oil (or melted butter)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional, for extra flavor)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

1. Preheat & Prep

  • Preheat oven to 425°F (220°C).
  • Line a baking sheet with parchment paper or lightly grease it.

2. Season the Cauliflower

  • In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, garlic powder, and smoked paprika.
  • Spread them evenly on the baking sheet.

3. Roast the Cauliflower

  • Roast for 20-25 minutes, flipping halfway through, until the edges are golden brown and crispy.

4. Add the Cheese

  • Sprinkle the Parmesan cheese over the cauliflower and roast for another 5 minutes.
  • Remove from the oven, then sprinkle the cheddar cheese on top.
  • Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.

5. Serve & Garnish

  • Remove from the oven and sprinkle with fresh parsley.
  • Serve hot and enjoy!

Notes

  • Extra Crispy Tip: Toss the cauliflower in 1 tbsp cornstarch before roasting for extra crunch.
  • Spicier Version: Add ½ tsp red pepper flakes or a drizzle of hot sauce before serving.
