- 1 1/2 lbs baby potatoes (halved) or small Yukon Gold potatoes (sliced)
- 3 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 tsp paprika
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven:
- Preheat oven to 400°F (200°C). Lightly grease a baking sheet or cast-iron skillet with cooking spray or line it with parchment paper.
- Prepare the Parmesan Crust:
- In a small bowl, mix melted butter, olive oil, garlic, Parmesan cheese, Italian seasoning, paprika, salt, and black pepper.
- Coat the Potatoes:
- Dip each potato cut-side down into the Parmesan mixture, pressing lightly to coat.
- Arrange the potatoes cut-side down on the baking sheet.
- Bake to Crispy Perfection:
- Bake for 25-30 minutes until the potatoes are crispy and golden brown on the bottom.
- Let them rest for 5 minutes before carefully flipping them with a spatula.
- Garnish & Serve:
- Sprinkle with fresh parsley and serve immediately. Enjoy your crispy, cheesy potatoes!

- For extra crispiness, broil for 2-3 minutes at the end.
