Description

These Crispy Cheesy Sweet Potato Bites are golden and crunchy on the outside, soft and cheesy on the inside. Made with mashed sweet potatoes, cheese, and a crispy breadcrumb coating, they’re great for snacking, party appetizers, or even as a fun side dish!

For the Sweet Potato Mixture:

  • 2 large sweet potatoes, peeled and cubed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional for a little heat)
  • 1/2 cup shredded cheddar cheese (or mozzarella)
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional)
  • 1/2 cup panko breadcrumbs (for texture)

For Breading & Frying/Baking:

  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Oil for frying (if frying)

Instructions

Prepare the Sweet Potato Mixture

  1. Boil the sweet potato cubes in salted water for 10–12 minutes, or until fork-tender. Drain and mash until smooth.
  2. Stir in salt, pepper, garlic powder, paprika, cayenne, cheddar cheese, Parmesan, parsley, and panko breadcrumbs until well combined.
  3. Scoop out small portions (about 1 tablespoon each) and roll them into bite-sized balls.

2. Coat the Bites

  1. Set up a breading station with three bowls:
    • Bowl 1: Flour
    • Bowl 2: Beaten egg
    • Bowl 3: Panko breadcrumbs mixed with salt, pepper, garlic powder, and paprika
  2. Roll each sweet potato ball in flour, then dip into egg, and finally coat in panko breadcrumbs.

3. Cook the Bites

Option 1: Frying (Crispiest Option)
6. Heat about 1 inch of oil in a pan over medium-high heat. Once hot (about 350°F/175°C), fry the bites in batches for 2–3 minutes per side, until golden and crispy.
7. Remove and place on a paper towel-lined plate to drain excess oil.

Option 2: Baking (Healthier Option)
8. Preheat oven to 400°F (200°C). Place the bites on a greased baking sheet.
9. Lightly spray with oil and bake for 20–25 minutes, flipping halfway, until crispy and golden.

Option 3: Air Fryer (Crispy & Healthier!)
10. Preheat air fryer to 375°F (190°C). Place the bites in a single layer and spray lightly with oil.
11. Air fry for 12–15 minutes, shaking the basket halfway through.


Notes

  • For extra cheesiness, press a small cube of mozzarella inside each ball before rolling.
  • Use smoked paprika for a richer flavor.
  • Store leftovers in an airtight container in the fridge for 3 days. Reheat in the oven or air fryer for best crispiness.
