Ingredients
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1 teaspoon chili powder (optional for extra spice)
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup beef broth (or chicken broth)
- 1 cup heavy cream (or half-and-half)
- 1 cup shredded cheddar cheese
- 4 oz cream cheese, softened
- Salt and black pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Crushed tortilla chips, for serving (optional)
Instructions

Cook the ground beef:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it up as it cooks. Drain excess grease if necessary. -
Sauté onion and garlic:
Add the diced onion and garlic to the pot and cook for 3-4 minutes until softened and fragrant. -
Add seasonings and vegetables:
Stir in the taco seasoning, chili powder (if using), Rotel tomatoes, black beans, corn, and beef broth. Bring the mixture to a simmer and let cook for 10 minutes. -

Reduce the heat to low and stir in the heavy cream, shredded cheddar cheese, and cream cheese. Stir until melted and smooth. -
