Description
This creamy spinach tomato tortellini is a quick and easy dish packed with cheesy tortellini, fresh spinach, and a rich, creamy tomato sauce. It’s perfect for busy weeknights!

- 1 (20 oz) package cheese tortellini
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes (with juice)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cook tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute.
- Add diced tomatoes (with juice), Italian seasoning, salt, black pepper, and red pepper flakes. Simmer for 3-4 minutes.
- Stir in heavy cream and Parmesan cheese, stirring until smooth.
- Add spinach and cook until wilted, about 2 minutes.
- Toss in cooked tortellini and stir until well coated.
- Serve hot, garnished with extra Parmesan if desired.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Add grilled chicken or shrimp for extra protein.
