Description

A quick and delicious one-pan meal featuring smoky sausage, tender pasta, and a rich, creamy sauce. Perfect for busy weeknights!

 


Ingredients

  • 12 oz smoked sausage (Andouille, kielbasa, or your favorite), sliced
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 1/2 cups heavy cream (or half-and-half for a lighter option)
  • 1 can (14.5 oz) diced tomatoes, drained (optional)
  • 2 cups uncooked penne or rotini pasta
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika (optional, for extra flavor)
  • 1/2 teaspoon red pepper flakes (optional, for spice)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar or Parmesan cheese
  • 2 cups fresh spinach (optional, for extra greens)

 

  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Sausage & Aromatics

Heat olive oil in a large skillet or Dutch oven over medium-high heat.

Add sliced smoked sausage and cook until browned, about 3-4 minutes per side. Remove and set aside.

In the same pan, sauté onion for 2 minutes, then add garlic and cook for another 30 seconds until fragrant.

Step 2: Simmer the Pasta

Pour in chicken broth, heavy cream, diced tomatoes (if using), uncooked pasta, Italian seasoning, smoked paprika, red pepper flakes, salt, and black pepper.

Stir well and bring to a gentle boil. Reduce heat, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender.

Step 3: Add Cheese & Finish

Stir in cheese and mix until melted. Add browned sausage back to the skillet.

If using, add spinach and cook for 2 minutes until wilted.

Step 4: Serve & Enjoy

Garnish with fresh parsley and serve warm.

 


Notes

Want it spicier? Use Andouille sausage and add extra red pepper flakes.

Make it extra creamy: Stir in 2 tablespoons of cream cheese.

Gluten-free? Use gluten-free pasta and check your sausage ingredients.
