Description

This creamy slow cooker meal is the ultimate comfort food! Tender chicken, hearty vegetables, and a rich, creamy sauce come together effortlessly in the crockpot. It’s perfect for a cozy family dinner, and you can serve it over mashed potatoes, rice, or biscuits for a satisfying meal.

 


Ingredients

  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 3 cloves garlic (minced)
  • 1 cup baby carrots
  • 2 cups diced potatoes (Yukon Gold or red potatoes)
  • 1 cup chopped celery
  • 1 small onion (diced)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tablespoons butter
  • 1 tablespoon cornstarch + 1 tablespoon water (for thickening, optional)

For Serving (Optional):

  • Mashed potatoes, rice, or biscuits
  • Fresh parsley for garnish

Instructions

  1. Prepare the Chicken & Veggies:

    • Season the chicken with salt, pepper, garlic powder, onion powder, and thyme.
    • Add baby carrots, potatoes, celery, onion, and garlic to the slow cooker.
  2. Slow Cook:

    • Place the seasoned chicken on top of the vegetables.
    • In a bowl, whisk together the cream of chicken soup, chicken broth, Worcestershire sauce, and butter. Pour over the chicken.
    • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender.
  3. Make It Creamy:

    • Remove the chicken and shred or leave whole.
    • Stir in heavy cream, sour cream, and cheddar cheese (if using).
    • If a thicker sauce is desired, mix cornstarch with water and stir into the slow cooker. Let cook for 10-15 more minutes.
  4. Serve & Enjoy:

    • Spoon the creamy chicken and veggies over mashed potatoes, rice, or biscuits.
    • Garnish with fresh parsley. Enjoy!

Notes

Swap cream of chicken soup for cream of mushroom or a homemade sauce for a fresh touch.

Add frozen peas or green beans in the last 30 minutes for extra veggies.

For a low-carb version, replace potatoes with cauliflower.

Use turkey or pork instead of chicken for variety.
