Description

A rich and savory one-pan meal featuring smoked sausage, golden potatoes, tangy sauerkraut, and a creamy sauce. Perfect for a quick and satisfying dinner!

Ingredients

Units Scale
  • 1 tbsp olive oil
  • 14 oz smoked sausage (kielbasa or bratwurst), sliced into rounds
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 medium Yukon gold or red potatoes, diced
  • 1 cup sauerkraut, drained and rinsed
  • 1/2 tsp caraway seeds (optional, for authentic flavor)
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1/2 cup shredded Swiss or Gruyère cheese
  • 1 tbsp butter (optional, for extra richness)

  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Cook the Sausage – Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned on both sides, about 5 minutes. Remove and set aside.
  • Sauté the Vegetables – In the same skillet, add the chopped onion and garlic. Cook for 2-3 minutes until fragrant. Add the diced potatoes, season with salt, pepper, and caraway seeds, and cook for another 5 minutes.
  • Simmer the Potatoes – Pour in the chicken broth, cover, and simmer for 10-15 minutes until potatoes are tender.
  • Add Sauerkraut & Cream – Stir in the drained sauerkraut, Dijon mustard, and heavy cream. Return the sausage to the skillet and let everything simmer for another 5 minutes.
  • Melt the Cheese – Sprinkle the shredded cheese over the skillet, cover, and let it melt for 2 minutes. Stir gently to combine.

  • Serve & Enjoy – Garnish with fresh parsley and serve hot!

Notes

  • For extra tang, add a splash of sauerkraut juice or a bit of apple cider vinegar.
  • Swap Swiss cheese for cheddar if you prefer a milder flavor.

  • Serve with crusty bread or rye bread for a complete meal.
