Description

This refreshing and tropical twist on the classic mojito blends juicy blackberries, creamy coconut milk, fresh mint, and a splash of rum. It’s the perfect summer cocktail—smooth, fruity, and slightly sweet with a hint of minty freshness.

Ingredients

Units Scale
  • 10 fresh blackberries (plus extra for garnish)
  • 8 fresh mint leaves (plus extra for garnish)
  • 2 tablespoons coconut cream (or coconut milk for a lighter version)
  • 2 tablespoons simple syrup (adjust to taste)
  • 1 1/2 ounces white rum
  • 1 tablespoon lime juice (freshly squeezed)
  • Club soda (to top off)
  • Ice cubes

Instructions

  1. In a sturdy glass or cocktail shaker, muddle the blackberries and mint leaves together until they release their juices.
  2. Add the coconut cream, simple syrup, rum, and lime juice. Stir or shake until well combined.
  3. Fill a glass with ice and pour the mixture over the ice.
  4. Top off with club soda and gently stir to combine.
  5. Garnish with extra blackberries, mint leaves, and a lime wedge if desired.

Notes

  • For a non-alcoholic version, skip the rum and add extra club soda or coconut water.
  • Adjust the sweetness by adding more or less simple syrup.
  • For an extra creamy texture, blend the drink with ice for a frozen mojito version.
